Every one of the 40 cakes in this book is a masterpiece. The cakes themselves are relatively simple, but the designs in richly coloured buttercream are real works of art and are achieved simply by using eight different piping nozzles. Making the buttercream itself has to be done carefully, with water-based cream lasting longer than milk-based, and care being taken not to over-beat. Then the creative business starts. For a tiered cake decorated with ruffles in different shades of turquoise, a small petal nozzle is used to suggest layer upon layer of ruffly material. A basketweave effect is easier than you might think with the basketweave nozzle, and a leaf nozzle can create not only decorative leaves but a wonderful spiky texture as background for the decoration. In the section on piping flowers the authors really come into their own with Sunflower Cupcakes, Camellia and Hydrangea "Flowerpots", and several projects where a large tiered cake is accompanied by matching cupcakes, for instance the Chrysanthemum and Daffodil design in subtle pinks and yellows. A bouquet of flowers can be created with buttercream cupcakes, and a gorgeous example here combines pink and green hydrangeas with mauve camellias, all wrapped in purple gauze and ribbons. Textile effects include lace and crochet, and the authors conclude with advanced techniques with the palette knife, transfers, stamping and stencilling. 160pp, templates, colour photos.
